Zucchini pizza bites

4 servings


  • 3 zucchini, cut into thick rounds (~0.5cm)
  • 80 mL marinara sauce
  • 60 g mozzarella, finely grated
  • ~30 g small pepperoni sausages
  • 15 mL olive oil
  • Kosher salt and freshly ground black pepper

For marinara sauce:

  • 15-30 mL olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, chopped finely
  • 120 mL chicken broth
  • 3 cans (~425 g) crushed tomatoes
  • Salt and pepper
  • Pinch of sugar
  • 2 g dried oregano
  • 8-10 fresh basil leaves, chopped

  1. Preheat oven to broil.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, add zucchini. Cook, flipping once until golden, about 1-2 minutes on each side. Season to taste with salt and pepper.
  3. Place zucchini rounds on a large baking sheet.
  4. Top each zucchini round with marinara, mozzarella, and pepperoni sausages.
  5. Place in the oven and cook until the cheese has melted, about 2 minutes

For marinara sauce:

  1. Add 15 mL or a little more olive oil to a hot pan over medium-high heat. Add garlic and chopped onions; cook until the onions are soft, 4-5 minutes.
  2. Add the chicken broth, whisking to deglaze the bottom of the pan; cook until the liquid reduces by half.
  3. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste, a pinch of sugar, oregano, and basil. Reduce the heat to low; simmer for 30 minutes.

Cheese can have a very high sodium content. It is preferable to choose cheeses with a low sodium content, such as mozzarella, or low-sodium cheeses.
