  • 240 g carrot, thinly shaved
  • 220 g zucchini, thinly shaved
  • 30 g shallot, thinly sliced
  • 15 g fresh flat-leaf parsley
  • 12 g mint leaves, torn
  • Ground black pepper
  • 30 mL extra-virgin olive oil
  • 30 mL fresh lemon juice
  • 8 mL white wine vinegar
  • 5 g Dijon mustard

  1. In a medium bowl, combine olive oil, lemon juice, vinegar, and mustard and stir well with a whisk.
  2. Add carrots, zucchini, shallots and toss.
